METHODE CHAMPENOISE

2014 Sparkling Pinot Noir

Made in the traditional method and bottle fermented with a minimum of seven years lees maturation. A delicate and dry sparkling wine with an intense fruit bouquet and distinct Pinot Noir characteristics. Creamy bubbles enhance the sustained power of the rich flavours on the palate.

2014 Unfiltered (cloudy)  Sparkling Pinot Noir

Made in the traditional method but without the final process of disgorging and tirage, this “cloudy” sparkling wine has been maturing for seven years and is full of complex yeasty and biscuity flavours. This very dry, crisp sparkling wine is best enjoyed very chilled.

WHITE WINES

2018 Field Blend – Semillon, Gewurztraminer, Chardonnay

This highly aromatic white wine shows fresh lavender, floral and apple blossom on the nose while pear and lychee dominate the palate. The freshness of this dry white wine makes it perfect for hot summer days and warm summer nights.

2020 Chardonnay
Bottled in September 2020, this dry wine shows citrus blossom on the nose and peach and citrus flavours on the palate. Lightly oaked, this wine will develop with age.

2021 Semillon – Chardonnay Blend 
This 50-50 blend was fermented in stainless steel and matured in seasoned French oak for 6 months, resulting in a wine that is both soft and complex. A fruity dry white showing peach, honey and citrus characters, with the sustained mouthfeel coming from the oak.

2013 Forest Fruits – Gewurztraminer

This is a wonderful early drinking semi-sweet white wine made from 100% Gewurztraminer grown in the cooler climate of the Bickley Valley. The aroma shows floral, rose petal and lychee characters while on the palate floral, passionfruit and lychee flavours dominate. Perfect to enjoy with spicy dishes, strong cheeses or as an aperitif.

RED WINES

2021 Rosé 

Made from a blend of Pinot Noir and Shiraz grapes, this delightful fruity, soft red wine shows subtle berry aromas followed with red currant and spicy notes on the palate. Finishing soft and dry, this lively wine is best appreciated chilled.

2019 Merlot 

This medium to full bodied wine has had 20 months in new and aged French oak. The Merlot fruit provides blackcurrant and earthy characteristics on the nose and palate. This wine will benefit from medium to long term cellaring.

2018 Cabernet Merlot Blend

Made from estate grown Cabernet Sauvignon (80%) and Merlot (20%) varieties to produce a medium bodied wine having a hint of eucalyptus on the nose and a blend of cherry, blackcurrant and plum. Matured in French and American oak for 18 months before bottling in late 2019. Good drinking early but will benefit from medium to long term cellaring.

2020 Cabernet Sauvignon

Made from estate grown Cabernet Sauvignon (90%) and Merlot (10%), this  full bodied wine is emphasised with strong berry aromas and followed with blackcurrant and chocolate characters that linger on the palate amongst soft tannins. Matured in French oak for 18 months before bottling in October 2021. This excellent wine will benefit from medium to long term cellaring.

2016 Ruby Cabernet Sauvignon (Fortified)

Made from late-picked Cabernet Sauvignon in 2016, this delicious sweet and smooth red wine is laced with fruity jam flavours and has been fortified with brandy spirit to produce a wonderful after-dinner drink. Best enjoyed with a nice cheese or chocolate.
